Start your day with this delicious fruit salad, which can be adjusted according to taste, or to include in-season fruits. If you have a sweet tooth, the combination of ingredients in our recipe might just curb your desire for sweets. We used a vanilla non-dairy yogurt and unsweetened coconut too, so this recipe is even great for fasting.
Fasting and consecration is designed to bring us closer to God, and the purity of the foods we eat at that time reminds me of a modern-day return to Eden. But, although the process challenges us to sacrifice: who said fasting has to be boring? Serves 4. Enjoy!
Genesis 1:29 – And God said, “See, I have given you every herb that yields seed which is on the face of all the earth, and every tree whose fruit yields seed; to you it shall be for food.”
Amazing Fruit Salad Recipe
One apple (seeded and cubed with skin on)
Two pears (preferably Bosc, seeded and sliced with skin on)
2 slices of fresh pineapple , cut into tidbits
1 cup seedless red grapes, cut in half
3-4 strawberries, cut into small pieces
A handful of blueberries or blackberries*
3 tablespoons non-dairy vanilla yoghurt*
¼ cup unsweetened shredded coconut
¼ cup of Pomegranate seeds
Combine apple, pears, pineapple, strawberries, grapes, and blackberries in a large bowl.
Mix with fruit.
Spoon into serving bowls; top with pomegranate seeds (when pomegranates are out of season, we like to substitute chopped walnuts).
- Did you know there are yogurts on the market made without dairy? Look for yogurt made from almond, soy, or coconut milk.
- Buy berries and grapes in-season for best flavor and lowest prices, and freeze for use later.
