AMAZING FRUIT SALAD
1 mango, chopped
1 cup of fresh pineapple, cut into tidbits
1 cup seedless red grapes, cut in half
5 strawberries, cut into quarters
3 heaping tablespoons non-dairy vanilla yogurt*
¼ cup unsweetened shredded coconut, soaked in hot water to soften
¼ cup of Pomegranate seeds (optional)
Combine pears, pineapple, grapes, and berries in a large bowl. Add yogurt and coconut; mix with fruit. Spoon into serving bowls; top with pomegranate seeds and serve.
