Our Westa.org recipes are back!  For Spring and for our Pilgrimage to Pentecost Consecration, we’re sharing a warm and satisfying salad recipe featuring 2 types of squash, dark leafy greens, and a simple orange dressing. Enjoy!

*HELPFUL TIPS:

  • This recipe has several parts, so for greater ease, you may prepare some items ahead of time.
  • While the butternut squash is roasting, you can use the time to prepare other elements, like the kale, quinoa, or dressing.
  • You can substitute cooked barley or black rice for the quinoa.
  • In Genesis 1:29, God said, “I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.” So according to the Word of God, fruits and vegetables are an essential part of a healthy diet.
