EASY RECIPE: Mixed Greens Salad with Chicken, Fruit & Pecans

If you’re looking for a way to add more fruit and leafy greens to your consecration time eating plan, try this tasty salad recipe.

It always feels like Summertime whenever you serve this beautiful, colorful, delicious salad.  The unusual combination of fruits, salad greens, and grilled or sauteed chicken makes a healthy, satisfying dish all on its own. Instead of buying ready-made poppy seed dressing which is often full of sugar, try making our lighter, healthier version to accompany this salad. 

This salad makes a great main dish, or serve it without the chicken as a side salad with any meal.  After consecration time, try another variation by adding lightly candied praline pecans (for our praline pecan recipe, please click HERE).

However you choose serve this salad, the combination of flavors will lift your spirit and your tastebuds.

Prep Time: 40 minutes.  Servings: 4

MIXED GREENS SALAD WITH CHICKEN, FRUIT, & PECANS

1 pound Boneless sliced chicken breast (seasoned with garlic powder, seasoned salt or Old Bay seasoning, and crushed black pepper)

1 Tablespoon of olive oil

1 Head Romaine lettuce

2 Cups Spring mix salad greens

1 Cup of sliced strawberries

1 Cup of fresh pineapple tidbits

1 Cup of canned Mandarin orange slices (drained)

1 Cup of pecans 

Poppyseed dressing to taste

  1. Add olive oil to frying pan; heat. Saute sliced, seasoned chicken breast for about 3 minutes each side (until lightly browned).  Remove from heat; set aside.
  2. Break (or cut) romaine lettuce into small pieces.   In a large bowl, mix with Spring greens.
  3. Toss mixed lettuces with poppyseed dressing to taste (or drizzle dressing on afterward). Divide into serving bowls.
  4. Divide fruits and chicken into 4 portions. Arrange fruit on top of lettuce. Add cooked chicken and top with pecans.

Serves 2-4.

SWEET-AND-TANGY POPPYSEED DRESSING

1 cup Plain Non-dairy Yogurt (made with almond milk, oat milk, etc.)

3 tablespoons Date Syrup (or pure maple syrup)

1 tablespoon Apple Cider Vinegar

1 teaspoon Lemon Juice

1 teaspoon Poppyseeds

Mix all ingredients; adjust to taste.  Serve with Mixed Green Salad with Chicken and Fruit; store remainder in refrigerator.
