EASY RECIPE: Mixed Greens Salad with Fruit & Praline Pecans

It always feels like Summertime whenever you serve this beautiful, colorful, delicious salad.  It’s my absolute favorite salad recipe. I look forward to serving it all year ‘round, and it’s always a hit with guests.

You can purchase candied or praline pecans and your favorite poppyseed dressing to accompany this salad, or make the lighter versions found HERE

Serve this as a side salad with any meal, or add chicken to make it a meal on its own.  I also prepare it without the chicken, or for consecration time, using plain pecans. Either way, the combination of flavors will lift your spirit and your tastebuds.

Prep Time: 40 minutes.  Servings: 4

mixed green salad ingredients


1 Boneless sliced chicken breast (seasoned with garlic powder, seasoned salt or Old Bay seasoning, and crushed black pepper)

1 Tablespoon of olive oil

1 Head Romaine lettuce

3 Cups Spring mix salad greens

2 Cups of sliced strawberries

1 Cup of fresh pineapple tidbits

1 Cup of canned Mandarin orange slices (drained)

1 Cup of praline pecans 

Poppyseed dressing to taste

  1. Add olive oil to frying pan; heat. Saute sliced, seasoned chicken breast for about 3 minutes each side (until lightly browned).  Remove from heat; set aside.
  2. Break (or cut) romaine lettuce into small pieces.   In a large bowl, mix with Spring greens.
  3. Toss mixed lettuces with poppyseed dressing to taste (or drizzle dressing on afterward). Divide into serving bowls.
  4. Divide fruits and chicken into 4 portions. Arrange fruit on top of lettuce. Add cooked chicken and top with praline pecans.

Serves 4.
